That said, I'm always grateful for an excuse to hang out in the kitchen. Especially when it involves a vegan pumpkin pie challenge.
Pumpkins are tough beasts though and I own approximately zero good knives. Spending an afternoon wrestling an orange giant into manageable chunks didn't seem like the best path to grace—I've skirted the issue by simply using the German name for this recipe. Kürbis is a word which handily covers the entire squash family, including pumpkins.
The haikiddo squash is small, chunk-able, and YOU CAN EAT THE SKIN. No peeling. Woah.
Oh, and it makes a darn tasty little tarts.
1 1/2 cups flour
1/2 tsp fine sea salt
10 tbsp vegan butter, cold
1/4 cup water, ice cold
2 & 1/4 cup puréed hokaido squash
1/2 cup sucanat
1/4 cup almond milk
1 tbsp vegan butter, softened
1/4 cup maple syrup
3 tbsp cornstarch
2 tsp vanilla extract
2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
To prepare the crust, combine flour and salt in a large bowl. Cut butter into small pieces and mix in with a fork until the dough has the texture of coarse meal. Mix in water just until the dough forms large clumps. Test by pressing two pieces of dough between your fingers—if the pieces stick together, you’re good to go; if not, add an additional 1-2 tbsp of water. Roll the dough into a smooth ball and flatten. Wrap with plastic and refrigerate for at least an hour. (Dough can be refrigerated for up to two days, or frozen for up to one month. Thaw in fridge overnight before using.)
Once the dough is firm, preheat oven to 350°F (175°C). Line a flat surface with parchment paper and sprinkle with flour. Lightly grease 2 muffin trays, set aside. Roll out dough to about 1/4″ thick. Cut into 4" circles and press gently into muffin forms.
In a large bowl, whisk together maple syrup and cornstarch. Add all other filling ingredients and mix well. Spoon filling into tart shells and smooth. Bake for 45 minutes. Refridgerate tarts for at least 3 hours, or overnight.
Serve with a dollop of whipped cream or vanilla ice cream. Vegan or non-vegan. Whatever floats your boat.
